Rajat Parr
The Parr Collective—comprising Phelan Farm, Scythian Wine Co., and BRIJ Wines—focuses on authenticity and regenerative farming. With biodynamic practices at Phelan Farm, re-energizing winemaking collaborations at Scythian, and a nod to his Indian heritage with BRij, Rajat’s minimalist winemaking produces vibrant, expressive wines that reflect both region and philosophy.
Farming Note
Scythian works with old-vine parcels in the historic Cucamonga Valley—dry-farmed, head-trained vines planted in the early 20th century. No irrigation. No chemicals. Just deep roots in granitic alluvial soils, surviving on minimal rainfall and maximum resilience. Farming is fully hands-on and organic, often carried out by the winemakers themselves, with deep respect for the site’s cultural and agricultural history.
Winemaking Note
Low-intervention and site-first. All wines ferment spontaneously with native yeasts, often with whole clusters and no temperature control. Elevage takes place in neutral barrels or small tanks—no new oak, no additions, and no filtration. Sulfur is used sparingly, if at all. The goal: pure expression of these historic vineyards, captured with humility and zero stylizing.

Tasting Note Lean and electric, this Palomino is all about tension and texture. Quince, green apple skins, and a subtle almond note hum in harmony, grounded by a sharp, saline finish. It’s raw and honest—a wine that’s not trying to prove anything but quietly leaves its mark.
