In the rugged valleys of Galicia, Pablo Soldavini is doing something rare—working old field blends from ancient vineyards to capture the full nuance of Ribeira Sacra. These high-altitude plots on crumbly granite and black slate were long abandoned. Pablo farms them by hand, organically, with a quiet, deliberate approach that mirrors both the wines and the people who first planted them. His wines aren’t polished or flashy—they’re raw, mineral-driven, and deeply expressive of place.
Farming Note
Organically farmed and entirely by hand. Steep slopes, old vines, and no shortcuts.
Winemaking
Native yeast, whole cluster, foot-tread. No corrections or additions. Aged in neutral barrels with minimal sulfur. Bottled unfiltered.
