Massimo Pastoris farms quietly in the Alto Piemonte hills, where Erbaluce and Nebbiolo have always belonged. He doesn’t chase headlines or try to reinvent anything—he’s simply doing the work the way it should be done: clean vineyards, traditional methods, and wines that reflect where they’re from. His family’s roots run deep in Caluso and Canavese, and it shows. These are soulful, no-frills wines made with purpose and precision—built for the table, and built to last.
Farming Note
Massimo farms his vines without shortcuts—no herbicides, no synthetic chemicals. Everything is done by hand across small plots rooted in quartz-rich sandy soils mixed with gravel and clay. He takes a sustainable approach, respecting the biodiversity of his hills and preserving traditional methods passed down through generations.
Winemaking
Vinification is simple and straight-up: native yeasts, long fermentations, and aging in large, neutral barrels or stainless steel depending on the wine. Nothing flashy. Just slow, honest winemaking that gives the wines structure and longevity without getting in the way of their character.
