Domaine Jean Collet et Fils
Founded in 1952 by Jean Collet—whose family has cultivated Chablis vineyards since 1792—Domaine Jean Collet et Fils is now led by Romain Collet. The domaine holds north-facing holdings across Chablis’ most prized terroirs, including Premier and Grand Cru sites. Romain favors low-intervention farming and a mix of vessels in the cellar, including foudres, concrete eggs, and amphora. His wines are precise, mineral, and expressive of place.
Farming Note
Domaine Jean Collet et Fils has been certified organic since 2018. Vineyard work across their Premier and Grand Cru sites is fully manual. Farming favors biodiversity, cover crops, and shallow cultivation to preserve soil structure and microbial life. The domaine’s low-intervention approach supports transparency and precision in the finished wines.
Winemaking Note
Collet follows a site-by-site approach in the cellar. All wines are fermented with native yeasts and aged in a mix of stainless steel, old wood, and concrete eggs—depending on the site. Sulfur use is minimal, and bâtonnage is rare. The goal is to preserve texture, length, and mineral clarity without masking terroir.
