Farming Note
Farming at Cume do Avia is holistic and regenerative, with low intervention and a focus on biodiversity. The vineyards lie on steep, rocky hillsides in Ribeiro, with granitic, schist, and slate soils. Everything is done by hand. Cover crops, compost, and herbal infusions are used to build soil vitality and support a living ecosystem. Their native varieties thrive in this environment, producing fruit with striking character and natural balance.
Winemaking Note
Winemaking at Cume is honest and transparent, following the same natural philosophy as their farming. All fermentations are spontaneous, with no added yeast or enzymes.
