In the dramatic landscapes of the Sierra de Gredos, César Fernández farms at altitude, where granite and slate soils dominate. The vines benefit from cool winds and long growing seasons, allowing grapes to ripen slowly and evenly.

Farming is organic and deeply place-driven, rooted in respect for the biodiversity of the rugged terrain. In the cellar, the approach is simple—low-tech, wild fermentations, and neutral aging. The wines are honest and fresh, with mountain acidity and mineral depth—a true expression of Gredos’ unique terroir.

Set in the clay-limestone soils of Castilla y León, César Fernández Díaz farms with care and restraint. He blends traditional practices with a modern focus on sustainability and soil vitality. The goal across old-vine sites is to preserve vineyard health and allow each variety—whether Mencía, Prieto Picudo, or Albillo Real—to express its place with clarity and balance.

Winemaking

All wines are fermented with native yeasts and guided by a restrained, hands-off approach. Gentle extraction and aging in neutral vessels preserve freshness, purity, and varietal character. Whether Mencía, Picudo, or Clarette, each cuvée reflects a thoughtful balance of tradition and precision—highlighting the energy and honesty of the region.
