Cavallotto

Cavallotto is one of the benchmark estates in Barolo. The family has farmed Bricco Boschis since 1928—long before Barolo became what it is today. They farm organically with an approach rooted in structure and site. Bricco Boschis is not a large cru, but it’s one that allows the wine to dictate the time to bottle, not the vintage. Cavallotto makes Barolo that speaks to region more than glamor—structural, layered, and quietly confident. These are not wines that chase trends. They are the standard to which others are held.

Farming Note

Certified organic since the early 2000s, though the family’s respect for the land goes back generations. No herbicides, no synthetic inputs, and no cover crops. Pruning is manual and guided by careful canopy management. The vines grow deep roots in compact soils—farmed with patience and precision.

Winemaking

All fruit is estate grown and estate bottled. Fermentations are spontaneous, with long macerations on the skins and aging in large Slavonian botti for four or more years. Some bottlings are unfiltered. These wines are built to age—and built to last.
